Keto Pecan Pie

Ingredients:

  • Keto pie crust (pre-baked for 10 minutes and cooled)

  • 3/4 cup butter

  • 1/2 cup swerve brown sweetener

  • 1/2 cup monk fruit sweetener (or allulose)

  • 1/2 tbsp vanilla extract

  • 1/4 tsp salt

  • 3 large eggs

  • 2 cups pecan halves

Instructions:

  1. Preheat oven to 325°F.

  2. Melt the butter, swerve brown sweetener, and monk fruit sweetener in a medium saucepan over medium heat. Bring to a simmer and reduce heat to low. Cook for 3 minutes, constantly whisking, until the mixture begins to darken in color. Remove from heat and let cool for a few minutes.

  3. In a small bowl, whisk together the vanilla extract and salt. Add to the cooled butter mixture and whisk to combine. Add the eggs, one at a time, whisking until well blended after each addition.

  4. Reserve a handful of pecan halves for decorating the top of the pie. Spread the remaining pecan halves evenly in the bottom of the pre-baked pie crust.

  5. Pour the filling mixture over the pecans into the pie crust. Decorate the top of the pie with the reserved pecan halves.

  6. Bake for 45-50 minutes, until the filling, is mostly set but still has a slight jiggle in the center. Allow cooling before serving. Enjoy!
