"Keto and Low Carb Reese's Cups - A Delicious and Healthy Chocolate Treat"

Ingredients:

  • 1/2 cup powdered monk fruit sweetener

  • 1/4 cup almond milk

  • 1 tsp vanilla flavor

  • 1 cup almond butter 

  • 2 tbsp coconut oil

  • Pinch of salt

  • 1 cup sugar-free milk chocolate chips

  • 1 cup sugar-free white chocolate chips

  • sea salt

Instructions:

  1. Combine the powdered sweetener, almond milk, vanilla flavor, peanut butter, coconut oil, and salt in a medium mixing bowl. It should be thick enough to roll into balls. Place aside.

  2. Melt the milk chocolate chips and white chocolate chips in separate bowls in the microwave for 15 seconds at a time, stirring after each interval, until the chocolate is smooth and fully melted. Make sure not to burn the chocolate.

  3. Divide the almond butter mixture into 12 equal parts, each containing about 26 grams. Set aside each component by rolling it into a ball.

  4. Using a silicone muffin pan, spoon about a tablespoon of melted chocolate into the bottom of each muffin cup. Place the pan in the freezer for 5 minutes to set the chocolate.

  5. Remove the muffin pan from the freezer once the chocolate has set, and press a peanut butter ball into the center of each muffin cup.

  6. Cover the peanut butter ball entirely with the remaining melted chocolate. If desired, season with sea salt.

  7. Place the muffin pan in the fridge (not the freezer) for at least 10 minutes or until the chocolate has set.

  8. Remove the muffin pan from the freezer and gently press on the bottom of each muffin cup to release the keto Reese's cup. Enjoy!
